The onset of Spring usually means time to make carrot cake. Unfortunately, I don’t always have the time to make my favorite traditional carrot cake with cream cheese frosting (hoping to get the recipe up here soon). So in a pinch, I made these quick carrot cake cookie bites. They aren’t exactly the same as the cake but still have the familiar carrot and cinnamon flavors and an icing drizzle adds a similar cream cheese frosting sweetness.
Get ready to cheat on that diet. Since it’s January, I should stick to posting healthy recipes that complement everyone’s new years resolutions. But that quickly becomes boring, doesn’t it? We just had one of the largest blizzards in history in the North East so would you rather stay home and eat vegetables or stay home and eat Double Layer Caramel Brownies? In my opinion, there’s no comparison. Brownies, especially gooey caramel ones, are the perfect comfort food for a snowy evening by the fire or watching Netflix.
Chocolate and chestnut, what a pair! As mentioned by Nat King Cole in The Christmas Song, Chestnuts roasting on an open fire are a holiday favorite. But over the years, chestnuts seem to have become less and less prominent. Frequently seen at most street carts around New York during the holidays, I have yet to find one this year. Maybe because most Chestnuts now come from Asia or maybe it’s just the trend life cycle. A whole article could easily be written on the history of chestnuts. I’m just here to share this delicious chocolate chestnut slices recipe.
Soft. Gingerbread. Drop Cookies. Need I say more?
Most of us think of gingerbread as cut out shapes or decorated houses. The idea of mixing, chilling, rolling, cutting, baking, and finally decorating gingerbread cookies may seem overwhelming. How can you make gingerbread less of an event but still have that great nostalgic spiced molasses cookie taste? Soft gingerbread drop cookies with cream cheese icing, of course.
Meatballs may not make you think of Mexican food. I would like to take credit for developing some sort of Italian/Mexican fusion soup, but Mexican Meatball soup is an existing dish. Frequently referred to by its Spanish name, Sopa de Albondigas, this basic soup can be made a number of different ways. Some include vegetables, rice, and herbs while others are mainly just meatballs, usually made of beef such as sirloin. I like additional inclusions in my Meatball soup and this spicy version chock-full of tasty textures and flavors, really fits the bill.
