Rich Sour Cream Dough

A lovely rich dough, similar to a coffee cake.


4 packages dry yeast
1/2 cup granulated sugar
1 teaspoon salt
1/2 cup cold milk
1 cup sour cream
2 teaspoons lemon juice
1 teaspoon vanilla extract
3 egg yolks
5 or 6 cups all purpose flour
1 1/2 cups soft butter

In a large mixing bowl, mix  yeast, sugar, salt, milk, sour cream, lemon juice, and vanilla. Stir in egg yolks. Add enough flour to make a medium-firm dough. Beat in soft butter. Knead in bowl or on a table for 10 minutes, adding more flour if necessary. When dough has been kneaded enough, it will be smooth and elastic. Cover bowl and place in the refrigerator immediately for at least 4 hours before using

The dough will rise in the refrigerator. It should be punched down each time. After it has become thoroughly chilled, it will need to be punched down no more than twice a day. It will keep in the refrigerator up to 3 days.

Makes 3 cakes.
