Refried Beans

The most delicious refried bean recipe ever! You’ll forget your eating refried beans…

Ingredients:

3 – 15.5 ounce cans pinto or kidney beans
2/3 cup butter or bacon fat
1 teaspoon chili powder
salt and pepper
grated Parmesan cheese
1 small onion, chopped

Empty cans into a strainer and run hot water over beans until all packing liquid has been rinsed away. Drain beans well.

Heat half of the fat in a large skillet. Add half the onion and saute for 1 minute. Add beans. When they are hot, begin to mash and stir them in the fat until they almost form a puree. Season with chili powder, salt, and pepper. Continue to cook over low heat, adding a little more fat from time to time. The longer the beans cook, the more fat they will need. Mash and stir as beans cook.

Just before serving, sprinkle with grated Parmesan cheese and remaining chopped raw onion.

Serves 6.
