Homemade Mayonnaise


2 egg yolks
1 1/4 cup vegetable oil
2 teaspoons lemon juices
1 tablespoon dijon mustard
1/2 teaspoon lemon juice
salt and pepper

Whisk together egg yolks, mustard, lemon juice, salt (start with 1/2 teaspoon), and pepper until well combined. Begin adding oil, while whisking continuously, one drop at a time. When mixture begins to emulsify, slowly add the oil in a steady stream until mayonnaise is formed.

Note: If mayonnaise is too thick, add 1/2 teaspoon of water to thin.
